Lemon Garlic Butter Salmon Radiatori

1. Prepare & Marinate the Salmon
If needed, remove the skin from the salmon fillets. Cut the skinless salmon into bite-sized chunks and place them in a large bowl. Add the McCormick Garlic, Herb & Wine Seasoning, black pepper, chopped garlic, fresh parsley, Italian seasoning, paprika, Tony Chachere's Creole seasoning, garlic powder, and onion powder. Add the vegetable oil, water, and white vinegar. Toss everything together until the salmon is evenly coated. Cover and refrigerate to marinate for at least 30 minutes, or longer if desired.

2. Cook the Radiatori
Bring a large pot of water to a boil. Add chicken bouillon to the water to give the pasta an extra layer of flavor. Add the radiatori pasta and cook according to the package directions until al dente. Once the pasta is finished, drain it and set it aside.

3. Sauté the Salmon
Remove the salmon from the refrigerator and allow any excess marinade to drain off. Heat a large skillet over medium heat and sauté the salmon pieces until they're cooked through and nicely browned on the outside. Once the salmon is cooked, remove it from the skillet and set it aside.

4. Sauté the Vegetables
Using the same skillet, add the red bell pepper, yellow bell pepper, shallots, tomatoes, spinach, and minced garlic. Sauté the vegetables until they begin to soften and the spinach has wilted. Allow the vegetables to pick up all those delicious browned bits and flavor left behind from the salmon.

5. Make the Garlic Butter Sauce
Once the vegetables have cooked down, add 1 to 1 1/2 stick of butter to the skillet. Allow the butter to melt completely, then add the remaining McCormick Garlic, Herb & Wine Seasoning. Stir everything together until the butter and seasonings create a rich, flavorful garlic butter sauce.

6. Bring Everything Together
Add the cooked radiatori pasta to the skillet with the sautéed vegetables and garlic butter sauce. Gently toss everything together until the pasta is completely coated and the vegetables are evenly distributed throughout. Add the cooked salmon back into the skillet and gently fold everything together, being careful not to break up the salmon too much.

7. Add the Lemon & Fresh Parsley
Add a few splashes of fresh lemon juice to brighten all of the flavors. Give everything a good stir to make sure the lemon, garlic butter, seasonings, vegetables, pasta, and salmon are evenly incorporated. Finish with a generous sprinkle of fresh parsley. Serve warm and enjoy!

The radiatori pasta is perfect for this recipe because its ridges and folds hold onto that delicious garlic butter sauce, making sure you get a little bit of everything in every bite.
Ingredients
For the Salmon
- Skinless salmon fillets, cut into bite-sized chunks
- 2 packets McCormick Garlic, Herb & Wine Seasoning, divided
- ¼ cup vegetable oil
- ¼ cup water
- 1 tablespoon white vinegar
- Chopped garlic
- Fresh parsley
- Italian seasoning
- Paprika
- Tony Chachere’s Creole seasoning
- Garlic powder
- Onion powder
- Black pepper
For the Pasta
- 1 box radiatori pasta
- Chicken bouillon, for seasoning the pasta water
- Water
For the Vegetables & Garlic Butter Sauce
- Spinach
- 1 red bell pepper, sliced or chopped
- 1 yellow bell pepper, sliced or chopped
- Tomatoes, chopped
- Shallots, sliced or chopped
- Minced garlic
- ½–1 stick butter
- Remaining McCormick Garlic, Herb & Wine Seasoning
- Fresh lemon juice, to taste
- Fresh parsley, for garnish
Chardonnay’s Cozy Tip
The secret to this dish is layering the flavor. I use the McCormick Garlic, Herb & Wine Seasoning throughout the recipe—from the salmon marinade to the vegetables and finally in the garlic butter sauce.
Using the seasoning in different stages allows the flavor to build throughout the entire dish, so every bite is packed with delicious garlic, herb, and savory goodness.
And don’t skip that final squeeze of lemon! It brightens up the rich butter sauce and brings all of the flavors together beautifully.
Why Radiatori?
Radiatori is one of my favorite pasta shapes for a buttery sauce because all of its little ridges and folds catch the sauce, vegetables, and seasonings.
If you don’t have radiatori on hand, you can substitute rotini, fusilli, penne, or another short pasta shape.
Variations
- Substitute shrimp or chicken for the salmon.
- Add freshly grated Parmesan cheese for an even richer sauce.
- Add red pepper flakes for a little heat.
- Add mushrooms, asparagus, or broccoli for additional vegetables.
- Use your favorite short pasta if radiatori isn’t available.
- Add extra lemon juice for a brighter, more citrus-forward flavor.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently on the stovetop or in the microwave. Add a small splash of water or broth when reheating if the pasta has absorbed some of the sauce.
